Summer Lemon Curd Drizzled Ice Cream Cones

A wonderfully simple summer treat that pairs rich, creamy vanilla ice cream with the bright citrus flavour of our silky Lemon Curd. Perfect for sunny afternoons, garden parties or an easy dessert everyone will love.

Ingredients (serves 4)

  • 4 generous scoops vanilla ice cream
  • 4 waffle cones
  • 6 tbsp The Wooden Spoon Lemon Curd
  • Zest of 1 lemon
  • Crushed shortbread biscuits (optional)
  • Fresh raspberries or blueberries, to serve
  • Fresh mint leaves, to garnish (optional)

 


Method

1. Warm the Lemon Curd:
Gently warm the Lemon Curd for 10 to 15 seconds in the microwave or over a bowl of warm water until it becomes beautifully smooth and pourable.

2. Fill the cones:
Scoop generous balls of vanilla ice cream into the waffle cones, pressing lightly so they sit securely.

3. Add the drizzle:
Slowly spoon the warm Lemon Curd over each ice cream, allowing it to cascade naturally down the sides.

4. Finish:
Sprinkle with freshly grated lemon zest and, if using, a little crushed shortbread for extra crunch.

5. Serve immediately:
Enjoy straight away while the ice cream is perfectly frozen and the Lemon Curd is deliciously silky.


Serving Suggestion

Serve with a handful of fresh summer berries and a glass of homemade lemonade for the perfect sunshine dessert. For an extra indulgent twist, try using honeycomb or clotted cream ice cream instead of vanilla.
