Recipe for Butternut Squash Curry with Buddhas Revenge Plum and Chilli Chutney..
- 1 butternut squash
- 1 onion
- 1 red pepper
- 3 cloves garlic
- 1 tsp cumin
- 1 tsp ground coriander
- 1tbsp curry powder
- 1 can coconut milk
- 1 heaped dessert spoon chutney
- Fry the onion and garlic until soft and sticky.
- Add spices, fry off, then add butternut squash and red peppers.
- Pour in coconut milk and simmer for 20 minutes or until the squash has softened.
- At the end stir through your Buddha’s revenge.
- Serve with rice and chopped coriander.
