Buddha’s Revenge Curry

Recipe for Butternut Squash Curry with Buddhas Revenge Plum and Chilli Chutney..

  • 1 butternut squash
  • 1 onion
  • 1 red pepper
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1tbsp curry powder
  • 1 can coconut milk
  • 1 heaped dessert spoon chutney
  1. Fry the onion and garlic until soft and sticky.
  2. Add spices, fry off, then add butternut squash and red peppers.
  3. Pour in coconut milk and simmer for 20 minutes or until the squash has softened.
  4. At the end stir through your Buddha’s revenge.
  5. Serve with rice and chopped coriander.
