Give your festive gammon a glossy, aromatic finish with The Wooden Spoon ‘Christmas Pudding’ Marmalade. Its rich citrus, spice and dried-fruit notes make an effortless Christmas glaze.

1.5–2kg unsmoked gammon joint

1 onion, halved

2 bay leaves

6–8 cloves

4 tbsp The Wooden Spoon ‘Christmas Pudding’ Marmalade

1 tbsp Dijon mustard

2 tbsp brown sugar
Method

Simmer the gammon: Place the gammon in a large pot, cover with water, add onion, bay leaves, and cloves. Bring to a boil, then simmer gently for 1 hour (or 20 min per 500g).

Heat the oven: Preheat to 200°C (180°C fan). Lift out the gammon and let it cool slightly.

Prepare the glaze: In a small pan, warm the marmalade, mustard, and brown sugar until melted and glossy.

Score and glaze: Remove the rind, leaving a thin fat layer. Score in a diamond pattern and brush generously with the warm glaze.

Roast: Bake for 20–25 minutes, basting once until caramelised and golden.

Rest and serve: Let stand for 10 minutes before slicing.
