Ingredients (serves 4)

4 tbsp The Wooden Spoon Wild Blueberries & Gin

200ml double cream

2 tbsp icing sugar

150g Greek yoghurt

Zest of 1 orange or lemon

Crushed shortbread or amaretti biscuits (optional)
Method

Whip the cream:
Whip the double cream with icing sugar until soft peaks form. -
Fold gently:
Fold in the Greek yoghurt and citrus zest to create a light, airy base. -
Layer the fool:
Spoon cream mixture into glasses, swirl through Wild Blueberries & Gin, and repeat for a marbled effect. -
Finish:
Top with a final spoon of the blueberry mixture and a sprinkle of crushed biscuits if using. -
Chill briefly:
Refrigerate for 20–30 minutes before serving.
