Spring Wild Blueberry & Gin Fool

A light and elegant dessert combining the deep fruitiness of Wild Blueberries & Gin with softly whipped cream — simple, refined, and perfect for spring evenings.

Ingredients (serves 4)

  • 4 tbsp The Wooden Spoon Wild Blueberries & Gin

  • 200ml double cream

  • 2 tbsp icing sugar

  • 150g Greek yoghurt

  • Zest of 1 orange or lemon

  • Crushed shortbread or amaretti biscuits (optional)


Method

  1. Whip the cream:
    Whip the double cream with icing sugar until soft peaks form.

  2. Fold gently:
    Fold in the Greek yoghurt and citrus zest to create a light, airy base.

  3. Layer the fool:
    Spoon cream mixture into glasses, swirl through Wild Blueberries & Gin, and repeat for a marbled effect.

  4. Finish:
    Top with a final spoon of the blueberry mixture and a sprinkle of crushed biscuits if using.

  5. Chill briefly:
    Refrigerate for 20–30 minutes before serving.


Serving Suggestion

A perfect spring dessert for entertaining, pairing beautifully with a small glass of chilled dessert wine or a gin-based cocktail to echo the botanical notes.
