Passionfruit Curd Cake


How to make this recipe

  • 125g unsalted butter, at room temp
  • 100g caster sugar
  • 230g self raising flour
  • 2 eggs
  • 125ml milk
  • pinch of salt
  • 300g The Wooden Spoon Passionfruit curd


  1. Preheat the oven to 180 degrees. Grease a 22cm round tin
  2. Place sugar, flour, salt and butter in a free stand electric mixer and mix
  3. Add milk and eggs; mix for 10 seconds
  4. Gently fold in The Wooden Spoon Passionfruit curd so its marbled through the batter
  5. Spread mixture in the tin and bake for 25-30mins
  6. Allow to cool for 10 mins then place on wire rack
  7. Sprinkle top with icing sugar

Serve with a blob of passionfruit curd with each slice.
